Toast the bread lightly (not too crisp)
Meanwhile in a pan, over a low flame-heat the olive oil and saute the bell peppers with some salt and pepper for 2-3 minutes
Lay out the toasted bread on a baking tray, place the crumbled cottage cheese and add the cooked peppers
Garnish with herbs and bake for 8-10 minutes or until crisp
Serve hot!
