Ingredients

  1. 2 cup almond flour
  2. 1/4 tsp baking soda
  3. pinch of salt
  4. 4 tbs honey
  5. 1 cup coconut milk
  6. 4 tbs coconut oil
  7. 2 egg
  8. 1/2 cup fresh blueberries
  9. vanilla extract

Instructions

  1. Preheat the oven at 350°F
  2. In a large bowl mix thealmond flour, baking soda, salt
  3. In a separate bowl mix the  coconut milk, egg, honey and coconut oil
  4. Pour into the almond flour mixture and mix to form a batter
  5. Fold in the blueberries
  6. Pour batter into paper lined muffin trays
  7. Bake for 20-25 minutes or until tops turn golden brown.Remove and cool before serving
