Pepperoni Egg Muffins

  1. 3 Whole Eggs
  2. Dash of Milk/Mylk
  3. Salt and Pepper
  4. 50 g Pepperoni
  5. Cheese - optional


Grease a muffin tray (I use coconut oil)
Pre heat the oven to 180 C
Whisk together the eggs, salt, pepper and milk of choice
Pour some of the mixture into each muffin hold (no more than halfway)
Layer the pepperoni and cheese 
Bake for 15-20 minutes 
There’s my quick grab (and delicious healthy saviour) while running out of the door.
