Preheat oven to 450 F.
Melt coconut oil in a cast-iron or other heavy skillet over medium-high heat. Add onions and sprinkle lightly with salt and pepper.Lower heat slightly and cook,until dark brown, about 20 minutes.
Meanwhile, toss sweet potatoes,cooking spray, 1 1/2 tsp salt, paprika,black pepper, and oregano in a large bowl. Stir in onions.
Spread sweet potato mixture on preparedbaking tray and roast for 30 minutes, stirring every 10-15 minutes, until sweet potatoes are browned.
In a skillet place the sweet potato and onion mixture. Turn on the heat and crack in the eggs. Cook until the eggs are done to your preference.
