Preheat your waffle iron.
In a bowl, whisk together the buckwheat flour, coconut sugar, baking powder, baking soda, salt and cinnamon.
Meanwhile in another bowl, whisk together the buttermilk, melted coconut oil and egg. Pour the wet mixture into the dry mixture and stir them together until creamy and consistent.
Pour batter onto the hot waffle iron plates, and cook until slightly crisp
Serve with bacon and honey or strawberries and ricotta.
