Keto Coconut Barfi/Bars

  1. 1.5 cups shredded unsweetened coconut 
  2. 1.25 cups unsweetened coconut milk 
  3. 100 g ghee 
  4. 4 tbsp Stevia
  5. 1 tsp Cardamom powder
  6. 10-20 Saffron threads


In a small bowl, mix 1 cup of coconut milk and shredded coconut. Set aside.

Mix the remaining coconut milk with Stevia and Saffron.

Heat a wok and melt the ghee. Add the coconut mixture and stir for 5-7 minutes on a low flame.

Add the Cardamom powder and cook the mixture for another 5 minutes.

Take a baking tray, butter it and spread the mixture evenly, up to 1 cm thick. Freeze it for 1-2 hours.

Cut small squares and the barfi is ready. Alternatively, roll into balls. Refrigerate for up to 5 days.
