  1. 6 eggs
  2. 4 tbsp. melted butter
  3. 4 tbsp. melted coconut oil
  4. 1/4 cup almond milk (unsweetened)
  5. 1.5 tbsp. vanilla extract
  6. 1/2 cup sugar substitute, granulated
  7. 2/3 cup coconut flour
  8. 1 tsp. baking powder
  9. 1/2 tsp. salt


Preheat the oven to 180 C.

In a large bowl whisk together the eggs, butter, coconut oil, almond milk, vanilla extract, and sugar substitute.

Meanwhile in a seperate bowl, mix together the coconut flour, baking powder, and salt.

Combine the wet and dry ingredients to form a thick batter.

Pour into prepared standard muffin tin. (We used cupcake wrappers)

Bake for 22-25 minutes until cooked through.
