Paleo Mocha Ice-cream (No Churn)

  1. 1 cup coconut milk/cream
  2. 1/4th cup unsweetened cocoa
  3. 1 cup pitted dates, soaked in warm water until soft
  4. 1 tsp vanilla extract
  5. 1/2 cup unsweetened almond milk
  6. 1 shot of espresso


1. Place a large mixing bowl in the freezer to chill for 10 minutes.

2. Meanwhile pulse the soft dates in a processor tp form a thick paste.

3. Place the coconut milk in the chilled mixing bowl.

4. Using a mixer, whip until smooth. Then add cocoa powder, vanilla, almond milk and half of the date paste. Mix well.

5. Cover with a plastic wrap and freeze.
