Protein Cheesecake

Almond Crust:

  1. 2 cups Almond meal/flour 
  2. 2 tbsp coconut oil
  3. Sea Salt
  4. 1/2 cup stevia 

Cheesecake Filling:

  1. 400 g Greek Yogurt, unflavoured
  2. 1/2 cup stevia 
  3. 2 Egg whites
  4. 2 Whole eggs
  5. 1/2 cup Unsweetened almond milk 
  6. 1/2 cup Vanilla protein powder 
  7. 1 tsp Vanilla extract
  8. 1/8 tsp Salt


  1. Preheat oven to 350 degrees. Spray an baking pan with cooking spray. In a bowl, mix together the dry ingredients for your crust, stirring to combine. Add in coconut oil and stir until mixture is crumbly. Press into the pan and bake for 10 minutes. Lower temperature of the oven to 300 degrees. 
  2. Filling: In a bowl, beat greek yogurt. Add the sweetener and mix . Add eggs one at a time.  Add the rest of the ingredients and combine well.
  3. Pour batter into your pan, spread it out evenly. Bake for 30 minutes. And then turn it down to 200 degrees and bake for 50 minutes. 
  4. Let cool on the counter. Refrigerate and serve.
