Baked Eggplant

Ingredients

  1. 1 eggplant, sliced
  2. 1 tbsp. extra-virgin olive oil
  3. 4 cloves garlic, thinly sliced
  4. Sea salt and freshly ground pepper
  5. 1 bunch parsley, finely chopped 
  6. Optional: Tomato Puree
  7. Optional: Cheese

Instructions

Preheat the oven to 200 C.

Place eggplant slices in a single layer on a lightly oiled baking sheet. Brush each slice with the olive oil. Garnish with garlic

Season with salt and pepper and bake (If using tomato and cheese, layer on top before baking) 20 to 25 minutes, until soft and golden brown. 

Remove from oven and allow to cool. When cool, sprinkle with parsley and serve.
