Heat ghee/oil in a thick-bottomed pan; add onion and sauté over medium heat for two minutes. Add garlic and continue to sauté for one minute.
Add tomato purée, red chilli flakes and salt and continue to sauté for two more minutes. Add bell peppers and paneer and continue to sauté for another minute, tossing continuously.
Transfer the contents to an 8*8 baking dish. Cover with grated cheese
Bake at 160C or until the cheese has melted and slightly browned
