Gluten Free Pesto Pasta

  1. 200 g gluten free pasta (or regular)
  2. 4 cups chopped spinach
  3. 1/2 cup milk of choice
  4. 4 oz fresh basil
  5. 2 garlic cloves
  6. 1/3 cup parmesan cheese
  7. 2 tbsp. extra virgin olive oil
  8. 1/2 tsp salt


1. Cook pasta according to package instructions.

2. In your food processor add in the cheese, olive oil, garlic, basil and salt. Pulse until the mixture comes together.

3. In a saute pan add the pesto and add the milk and chopped spinach. Stir until you obtain a creamy mixture. Add the pasta and combine. Serve immediately.
