Honey-Ginger Tofu With Stir Fried Veggies

  1. 1 tablespoon Sesame oil
  2. 200 g extra firm tofu
  3. 1/2 cup chopped bok choy
  4. 1 cups chopped bell peppers & carrots
  5. 1 green onion, minced
  6. 3 cloves garlic
  7. 2 tablespoons fresh ginger
  8. 1 tablespoons honey 
  9. 1/4th cup low sodium soy sauce
  10. 1/4th cup water
  11. 2 tbsp. rice wine vinegar
  12. 1 tbsp.Sesame Oil


  1. Puree all the sauce ingredients together in a food processor until smooth. Set aside.
  2. Cut the tofu into slices and press with a paper towel to remove excess moisture. Cut the tofu slices into small cubes.
  3. Heat the oil in a large nonstick skillet over medium heat. Add the tofu and about ¼ cup of the stir fry sauce . Pan-fry the tofu until golden brown. Remove from the pan and set aside.
  4. Veggies: Return the pan to the heat and add the veggies with ¼ cup stir fry sauce. Sprinkle with the green onions & serve.
