Mexican Rice Bowl

Ingredients

  1. 1/2 cup rice, uncooked
  2. 1 cups vegetable broth
  3. 1/2 onion, diced divided
  4. 1/2 stalk celery
  5. 3 garlic cloves, chopped divided
  6. 1/4th cup salsa
  7. 1/2 cup black/kidney beans
  8. ½ tsp cumin
  9. ½ tsp oregano
  10. 1 tbsp olive oil, divided

Instructions

  1. Saute ½ onion, celery and garlic in 1/2 tbs olive oil until translucent and slightly browned.
  2. Add uncooked rice, salsa, and vegetable broth and cook rice covered on low for about 25 minutes, or until done.
  3. Saute ½ onion in 1/2 tbs olive oil for about 5 minutes or until translucent. Add garlic and cook for another minute.
  4. Add cumin and oregano and beans . Season with salt and pepper to taste and let it cook for another 5 minutes.
  5. In a bowl assemble the greens of choice or bell peppers. Top with rice & beans. Additional toppings: greek yoghurt/avocado/corn.
