Paleo Green Bean Casserole

  1. 2 Tbsp Coconut oil
  2. 2 Cups Mushroom sliced
  3. 1 Cup Onion diced
  4. 1 Cup Coconut Milk divided
  5. 1 tsp Sea salt
  6. 1/4 tsp Pepper
  7. 1 Lb Green beans trimmed


Pre heat the oven too 180 C

Trim the green beans and steam / cook in a pressure cooker for one whistle

Meanwhile in a pan heat the oil, sauté the onions until golden brown

Add the mushrooms and cook for 3-4 minutes

Now add in the coconut milk, salt and pepper and mix for a few minutes

Lower the heat and let it simmer

Once the sauce is thick, add the green beans in and stir until evenly coated.

Pour the mixture into an 8x8 inch baking dish and bake until the sides are bubbly and the sauce has further thickened, about 25 minutes.

Serve hot!
