Paleo-Ish Burrito Bowl

  1. 2 scrambled eggs
  2. 4 tbsp. Baked beans
  3. 3/4th cup, bell peppers, chopped
  4. 2 tbsp.Sweet Corn
  5. Salt & Pepper to taste
  6. Cooking Spray/ 1/2 tbsp Oil
  7. 1 small onion, diced
  8. 1/2 tsp Taco seasoning


  1. Heat the oil in a pan. Saute the onions until golden brown.
  2. Toss in the assorted bell peppers. Cover a cook until the peppers begin to soften.
  3. Mix in the corn and taco seasoning. Combine well.Remove and set aside
  4. In a separate bowl, whisk the eggs together. Add in a dash of milk (optional)
  5. In a pan, add some oil. Once heated pour in the egg mixture.
  6. Scramble the eggs as you would, in a circular motion.
  7. Once the eggs begin to set, add in the bell pepper mixture and combine well.
  8. Add salt and pepper to taste.
