Protein Overdose Club Salad

Ingredients

  1. 2 slices bacon
  2. 1 boneless, skinless chicken breast halves,
  3. salt and ground pepper
  4. 3-4 Sundried Tomatoes
  5. 1/2 small red onion, chopped
  6. 2 tbsp. light mayonnaise
  7. 1 tablespoon white-wine vinegar
  8. Mixed lettuce leaves

Instructions

Preheat oven to 400 degrees. Cook the bacon on a stove top, until it begins to render its fat and is crisp.

Season chicken with salt and pepper, and place on the baking tray. Bake until chicken is cooked through, 15 to 20 minutes.

Let chicken cool completely. Meanwhile, in a large bowl, combine tomatoes, onion, mayonnaise, and vinegar. Crumble the bacon after wiping excess fat/oil.

Cut chicken into chunks, and add to bowl. Season with salt and pepper, and toss to coat. Serve chicken salad over lettuce leaves, and sprinkle with bacon.
