Roasted Vegetables With Hummus

Ingredients

  1. 1 yellow bell pepper
  2. 1 red bell pepper
  3. 12 button mushrooms
  4. 10 garlic cloves, crushed
  5. 2 tsp. Olive Oil
  6. 6 tbsp. Hummus, to serve
  7. Salt & pepper, to taste

Instructions

  1. Slice the bell peppers thinnly. Chop the mushrooms length wise.
  2. In a large bowl, mix the vegetables and garlic. Add olive oil and coat well. Season with salt and pepper
  3. Preheat the oven to 200 C
  4. Place the vegetables on a baking tray and place in the oven.
  5. Bake for 25 minutes or until the peppers begin to char slightly.
  6. Serve with hummus!
