Soy Spiced Rice Noodles With Edamame

  1. 100 g Rice noodles
  2. 2 tsp toasted sesame oil
  3. 3 cloves garlic, minced
  4. 1/4 cup vegetable/chicken broth
  5. 2 Tbsp low-sodium soy sauce
  6. 1/2 tsp red pepper flakes
  7. 1 cup, shelled edamame


1. Bring a small pot of water to boil. Add the rice noodles and cook for 6-8 minutes. Drain, rinse with cold water, and set aside.

2. Heat the sesame oil in a large saute pan. Add the garlic; saute 1-2 minutes Add the noodles and toss for just a few seconds.

3. Add the soy sauce, broth, and red pepper flakes and mix well. Stir in the edamame. 

4. Add tofu/chicken for protein!
