Cube the chicken into 2" squares
Marinate the chicken breast in a resealable plastic bag with cumin, paprika, salt, pepper, garlic, olive oil and lemon juice. Mix and coat to combine. Marinade for 20 minutes to 4 hours.
Arrange in baking pan without crowding and broil 4 to 6 inches from heat, stirring once, until chicken is just cooked through and vegetables are lightly charred, about 8 minutes. Divide hummus among plates and top with chicken and vegetables.
Heat grill to medium heat. Add a small amount of olive oil and grease the grill.Now, add the marinated chicken skewers. Cook chicken on each side until no longer pink (160-165°F), about 4-6 minutes on each side
In a bowl, scoop out the hummus.
Place the grilled chicken cubes. If you so please- add some roasted vegetables-to make a completete meal!
