Spiced Root Vegetables

Ingredients

  1. 1 tablespoon coconut oil
  2. 4 medium carrots, chopped
  3. 2 medium sweet potatoes, chopped
  4. 1 onion, sliced
  5. 1 teaspoon ground cumin
  6. 1 teaspoon smoked paprika
  7. ¼ teaspoon cinnamon
  8. ¼ teaspoon chili powder
  9. Sea salt to taste

Instructions

Preheat oven to 180 degrees C

Toss carrots, onion and sweet potatoes with the coconut oil and spices. Lay flat on a sheet pan.

Roast for 15 - 20 minutes, or until vegetables are tender. Add salt to taste, garnish with fresh/dried herbs and serve warm.
