Spicy Shrimp & Rice Noodles

Ingredients

  1. 1 tablespoon rice vinegar
  2. 2 teaspoons honey
  3. 1 tablespoon chilli paste
  4. 1 ttsp. soy sauce
  5. 300 g peeled medium shrimp
  6. 100 g rice noodles 
  7. 1 tablespoon peanut oil
  8. 2 tablespoons chopped unsalted nuts/sesame seeds
  9. 1 tablespoon minced garlic
  10. 2 teaspoons chopped peeled fresh ginger
  11. 1 green Thai chillli
  12. 1/2 cup peppers
  13. 1 cup carrots, juliened
  14. Salt
  15. 1 cup snow peas, trimmed
  16. 1 cup fresh bean sprouts

Instructions

  1. Combine vinegar, honey, chilli paste and soy sauce. Whisk well. Add shrimp to vinegar mixture; coat the shrimp. Cover and refrigerate 30-45 minutes.
  2. Cook the noodles as instructed on the package.
  3. In a large pan, add the oil, along with the garlic and ginger.Cook for about a minute.
  4. Now add the vegetables and stir fry for 3 minutes. Add the shrimp mixture and continue to stir fry for another minute or two.
  5. Mix in the noodles, beean sprouts and snow peas. Once cooked add in the paste and combine well.
