Sun-dried Tomato Pesto Scramble

  1. 2 whole eggs, beaten with a dash of skimmed milk
  2. 2 tbsp. Sundried Tomato pesto
  3. 1 tbsp. parsley
  4. Sundried Tomato Pesto:
  5. 3/4 cup sundried tomatoes
  6.  1/3 cup pine nuts
  7.  2 garlic cloves, chopped
  8.  1/2 cup olive oil
  9.  1/3 cup parmesan cheese


Process tomato, pine nuts and garlic, scraping down sides occasionally, until almost smooth in a blender

Add oil in a slow, steady stream. Blend again.

Transfer to a bowl. Add parmesan. Season with salt and pepper. Stir to combine.

Spray some cooking spray on a skillet. Add the beaten eggs once heated.

Scramble the eggs in a circular motion until the eggs are semi cooked.

Now add the sundried tomato pesto. Combine well. Once cooked, add the parsley and serve.
