  1. 1 large sweet potato, cubed
  2. 1 cup chickpeas, cooked
  3. 1 cup uncooked quinoa
  4. 1 large carrot, julienned
  5. 1 cup purple cabbage, shredded
  6. 1 cup greens/leaves
  7. Hummus
  8. Sliced avocado


  1. Preheat oven to 400F and grease two large baking trays with cooking spray/oil.
  2. Spread out the chopped sweet potato on one sheet. Drizzle with 1/2 tablespoon of oil or so and toss the potatoes until coated. Sprinkle with fine grain sea salt.
  3.  Transfer the chickpeas to the baking sheet and drizzle with 1/2 teaspoon oil. Toss gently to combine.
  4. Place both the sweet potato and chickpeas into the oven for 30 minutes-flipping the contents over half way. Roast for 15 minutes at 400F and then remove both. 
  5. Cook the quinoa in water as a 1: 2 ratio.
  6. Add a couple handfuls of greens into a large  bowl. Add the vegetables and chickpeas followed by the sliced avocado, hummus, shredded veggies, and hemp seeds. Serve.
