Ingredients

  1. 1 head cauliflower
  2. 1 egg
  3. ½ cup mozzarella cheese, shredded
  4. 1 tsp. Italian Seasoning
  5. Black pepper & Salt

Instructions

Preheat oven to 375 degrees F. Wash the cauliflower and chop into florets. Process in a food processor and process until "rice" texture.

Bake for 20 mins.Transfer to a linen towel. Let it cool for 10 minutes. Squeeze out excess water

Mix cauliflower to a mixing bowl along with egg , cheese, herb seasoning, black pepper, pinch of salt and mix to combine.

Transfer cauliflower mixture onto the baking sheet lined with parchment paper. Flatten into a rectangle.

Bake for 15 minutes, remove from the oven and top with some more cheese. Bake for another 5 minutes until cheese turns golden brown. Cut and serve
