Roasted Garlic Hummus

  1. 2 cups cooked chickpeas
  2. 2 tablespoons tahini
  3. 4 tablespoons olive oil
  4. 1⁄4 cup warm water
  5. 1 large head of garlic
  6. 1 lemon, juiced
  7. 1⁄4 teaspoon salt & paprika


1. Roast the garlic on a stove top until slightly brown and crisp.

2. In a flood processor add the chickpeas, cooled garlic, lemon, salt, olive oil and tahini. Blend until completely smooth-stopping and scrapping the sides.

3. If you find that the hummus is too thick, you can add additional olive oil at this time. Blend until smooth. Serve at room temperature with some paprika.
