Sweet Potato Truffle Fries

  1. Cooking spray
  2. 4 medium sweet potatoes
  3. 1 1/2 tablespoons olive oil 
  4. ½ tablespoon truffle oil/Truffle Shavings
  5. 3 cloves garlic, finely minced
  6. ½ teaspoon garlic powder
  7. ½ teaspoon sea salt
  8. ¼ cup Parmesan cheese


  1. Preheat oven to 400 degrees F. Line two large baking trays with nonstick cooking spray.
  2. Cut potatoes into matchstick-like shapes. 
  3. Place the potatoes in a large bowl and use a paper towel to absorb any excess moisture. Next add olive oil, truffle oil, garlic, garlic powder and salt to the bowl, combine well. Sprinkle parmesan cheese on top and gently toss again.
  4. Arrange the fries on the baking trays. Place in oven, for 35-40 minutes.
  5. Once golden brown, remove from the oven and allow to cool before serving. Season again to taste.
