Zucchini Parmesan Chips

  1. 2 medium zucchinis, sliced
  2. 1/2 cup egg whites
  3. 1/4 cup Parmesan
  4. 1/4 cup whole wheat bread crumbs
  5. Salt, to taste
  6. 1/2 teaspoon garlic powder
  7. Black pepper
  8. Red pepper flakes,optional


  1. Preheat the oven to 400 F. Cover baking tray with cooking spray.
  2. Place egg whites in small bowl. In another bowl, combine the Parmesan, bread crumbs, salt, garlic powder, red pepper flakes and a little black pepper.
  3. Dip each zucchini slice in egg whites and then into the bread crumb mixture. Place slices on prepared baking tray and bake for 15 minutes. Flip and bake another 10 minutes or until zucchini chips are golden brown and crisp.
