Broccoli & Almond Soup

  1. 15 Almonds
  2. 2.5 cups Broccoli florets
  3. 1/4th cup full-fat milk (Almond Milk for Paleo)
  4. Salt and Pepper to taste


  1. Wash and clean the broccoli florets. Heat 2 cups of water in a vessel. Add a pinch of salt and boil. Add the broccoli and blanch for just under 3 minutes. Cool and drain the water, but reserve it.
  2. Roast the almonds on a baking tray/pan for 2-3 minutes and allow them to cool. Now grind the almonds coarsely.
  3. In a blender, mix the broccoli florets, almonds, skimmed milk and reserved water. Grind until a smooth puree is formed.
  4. Finally, transfer the contents to a vessel and bring to boil.
