Fig & Arugula Salad With Goat Cheese

  1. 4 dried figs, chopped
  2. 2 tablespoons balsamic vinegar
  3. 1/2 tablespoons extra virgin olive oil
  4. 2 cups arugula
  5. 1 ounce goat cheese                                               
  6. 6 Almonds                             


In a small bowl, whisk together the balsamic, oil, with a pinch of salt, and pepper  

Roast the almonds in the oven or on a stove top for 8 to 10 minutes. Then chop them-unevenly.

Meanwhile, wash and dry the arugula . Seperate the goat cheeseinto smaller chunks and add to the leaves. Spoon the figs over the salad. Drizzle with the dressing and sprinkle with a little more pepper. Garnish with roasted almonds. Add grilled chicken/bacon.
