Mediterranean Salad

  1. 100g couscous, cooked
  2. 200ml vegetable stock 
  3. 2 spring onion
  4. 1 red pepper
  5. ½ cucumber
  6. 50g feta cheese, cubed
  7. 2 tbsp pesto
  8. 2 tbsp toasted pine nut


Place the couscous into a large bowl, pour over vegetable stock. Cover, then leave for 10 mins, until thick and most of the water has been absorbed.

Meanwhile, slice the onions and pepper and  cucumber.

Add these to the couscous,pesto,feta, then sprinkle over pine nuts to serve.
