Paleo "Cream" Of Mushroom Soup

  1. 2 tablespoons olive oil
  2. ½ pound mushrooms, chopped
  3. 1 shallot, chopped
  4. 1 clove garlic, chopped
  5. 3 cups vegetable broth
  6. 2 teaspoons sea salt
  7. ½ teaspoon pepper
  8. ½ teaspoon dried thyme
  9. 3/4th cup raw cashews


  1. Saute the mushrooms, shallot and garlic over medium heatuntil the liquid has mostly evaporated.
  2. Pour in the vegetable broth, salt, pepper, and thyme. Simmer for 5 minutes then add the cashew cream.
  3. Soak the cashews in boiling water for 30 minutes. Drain the water. Use an immersion blender and pulse a few times to blend the cashews into a a cream. Add the soup to a blender and blend until desired consistency. 
  4. Serve with a little drizzle of olive oil and fresh thyme.
