Quinoa, Avocado & Pomegranate Salad

  1. 1/2 cup walnuts
  2. 1 cup dry quinoa
  3. 2 cups water
  4. 2 tbsp fresh lemon or lime juice
  5. 1 tsp smoked paprika
  6. Pinch of salt and pepper
  7. Pinch of dried chilli flakes, to taste
  8. 4 cups salad leaves (lettuce/spinach/arugula)
  9. 1 ripe avocado, peeled, pitted and chopped
  10. Seeds from 1/2 a Pomegranate
  11. Balsamic vinegar, to serve


1. Roast the walnuts for 7-8 minutes

2. Cover the quinoa with double its volume of water, bring it to the boil.

3. Bring the heat down and allow it to simmer for 10-15 minutes, until most of the water has evaporated.

4. Stir in the lemon/lime juice, smoked paprika, seasoning and chilli flakes. Taste and adjust seasoning, if necessary.

5. Arrange the leaves in serving bowls, add the quinoa, avocado, pomegranate seeds, drizzle with balsamic vinegar and serve.
