Rainbow Crunch Salad

Ingredients

  1. 4 cups shredded cabbage 
  2. 1 red bell pepper, thinly sliced 
  3. 1/2 cup desicated coconut
  4. 1/2 cup crushed peanuts
  5. cilantro-to garnish (optional)                         

Instructions

Wash and prepare all vegetebles.

The veggie measurements are flexible; adjust to your preference.

Mix all the ingredients. Store in an airtight glass container in the refrigerator up to 2 days.

Add grilled chicken/tofu to increase the protein content.
