Spiced Carrot Soup

  1. 1  large yellow onion, chopped
  2. 3 cloves garlic, diced
  3. 2 cups carrots,  chopped
  4. Salt and Pepper
  5. 1 cup vegetable Stock                                            
  6. 1 cup water
  7. 2-3 tbsp. Peanut Butter
  8. 2 tsp chili garlic sauce
  9. Cooking spray


  1. Heat a large pot over medium heat.
  2. Dice onion and garlic. Add to pot with Cooking spray (Or 1 Tbsp coconut or olive oil .) Add carrots and cook for 5 minutes.
  3. Season with a pinch of salt and pepper, then add the stock and water and stir.
  4. Bring to a low boil, then reduce heat to a simmer. Cover and cook until veggies are tender.
  5. Transfer to a blender and blend until smooth and creamy. 
  6. Add peanut butter and chili garlic sauce to the blender and blend to form a puree.
  7. Taste and adjust seasonings as needed.
