Ingredients

  1. 175 g quinoa
  2. 600 ml water
  3. 10 cherry tomatoes, halved
  4. 1 cucumber, sliced/diced
  5. 3 spring onions
  6. 1/2 lemon, juiced
  7. 2 tbsp. olive oil
  8. 4 tbsp. mint
  9. 4 tbsp. coriander
  10. 4 tbsp. parsley, chopped
  11. Salt & pepper

Instructions

  1. Cook the quinoa for 15 minutes (boiled in water) in a 2:1 (Water to quinoa) ratio.
  2. Drain any excess liquid and let the quinoa cool. Then toss together all the ingreidents.
  3. Top with boiled eggs/grilled chicken/tofu for extra protein!
