Ingredients

Salad Ingredients:

  1. 1 cucumber, sliced  
  2. 1 red bell pepper, diced
  3. 1/3rd cup cherry tomatoes, choped
  4. 1/2 red onion,chopped
  5. 5 scallions, sliced
  6. 1/4th cup Feta Cheese
  7. 6 Olives
  8. Fresh parsley

Dressing Ingredients:

  1. 1 cloves garlic, minced 
  2. 1/2 teaspoon dried oregano
  3. 1/4th teaspoon Dijon mustard 
  4. 1 tbsp. red wine vinegar 
  5. Pinch of salt & pepper
  6. 2 tbsp. extra virgin olive oil

Instructions

  1. Place the chopped cucumber, peppers, tomatoes and red onion in a large bowl.
  2. For the vinaigrette, whisk together the garlic, oregano, mustard, vinegar, salt and pepper in a bowl to form an emulsion.
  3. Pour part of the vinaigrette over the vegetables and toss.
  4. Add the feta, scallions and olives  on top immediately before serving. Garnish with parsley. Drizzle the rest of the vinaigrette.
