Low Carb Balsamic Salad

Ingredients

  1. 1 1/3 cups chopped tomato
  2. 1/2 cup sun-dried tomatoes
  3. 2 tablespoons balsamic vinegar
  4. 1 tablespoon olive oil
  5. 1/4 teaspoon salt
  6. 1/4 teaspoon black pepper
  7. 2 garlic cloves, peeled
  8. 3/4 cup water
  9. 6 cups romaine lettuce
  10. 1 cucumber, peeled and sliced
  11. 1 red onion, sliced 

Instructions

Combine the balsamic vinegar, olive oil, salt, black pepper and garlic cloves in a blender.

Arrange 2 cups lettuce on each plate; top lettuce with cucumber, sundried tomato, tomato and onion slices.

Spoon 2 tablespoons dressing over each serving.Crumble feta on top.(Not for paleo/vegan version)


Notes

Top with grilled meat, to complete the meal.
