Grilled Watermelon & Feta Salad

Ingredients

1 small watermelon, cut into squares/rounds

1/2 cup small mint leaves

1/2 cup feta cheese, crumbled

1 tablespoon olive oil

1 tablespoon balsamic vinegar

1/4 teaspoon sea salt

1/4 teaspoon black pepper

Instructions

  1. Heat a grill or grill pan over high heat. Grill the watermelon squares, until charred slightly. 
  2. Arrange watermelon on a serving platter; sprinkle with mint and feta. Drizzle with olive oil and balsamic vinegar. Season with salt & pepper.
