Strawberry & Arugula Salad

  1. 1/2 cup  raw walnut halves
  2. 1 1/2 Tbsp coconut/olive oil, melted
  3. 1 Tbsp coconut sugar, brown sugar or cane sugar
  4. Pinch each sea salt, ground cinnamon and cayenne pepper


  1. 3 Tbsp olive oil, divided
  2. 2 shallots , thinly sliced
  3. Pinch each sea salt and pepper
  4. 1/3 cup  balsamic vinegar
  5. 1-2 Tbsp honey


  1. 1 1/2 cups strawberries 
  2. 2 cups arugula 
  3. 1/4th cup quinoa


  1. Roast the walnuts lightly.
  2. Meanwhile, add coconut oil, coconut sugar, sea salt, cinnamon and cayenne pepper to a small mixing bowl and whisk to combine.
  3. Toss the toasted nuts with spice mixture. 
  4. Heat a small saucepan over medium heat. Once hot, add 1 Tbsp olive oil and shallot. Sauté until soft. Remove from heat and set aside to cool slightly.
  5. Add shallot to blender or food processor with balsamic vinegar, 2 Tbsp olive oil, honey and a pinch each salt and pepper, until completely smooth.
  6. Add arugula, cooked quinoa, strawberries and most of the roasted walnuts to a large mixing bowl and top with 2-3 Tbsp dressing. Toss well.
  7. Plate salad and garnish with remaining nuts.
