Ingredients

1 large head cauliflower 

1.5 tablespoon coconut oil

1 medium shallot, chopped 

4 cloves garlic, chopped

1⁄2 bunch finely chopped fresh cilantro, parsley, or a combination 

1⁄4 teaspoon sea salt

1⁄4 teaspoon ground black pepper

Instructions

  1. Trim the stem from the cauliflower. 
  2. Grate the cauliflower on a grater. 
  3. Heat the oil in a large nonstick skillet over medium-low heat. Add the shallots and sauté until soft, 1 to 2 minutes. 
  4. Add the garlic and continue to cook another minute. 
  5. Add the cauliflower and cook, stirring until it is hot and heated through, 8 to 10 minutes longer. Fold in the herbs, season with the salt and pepper, and serve.
