Ingredients

2 chicken breasts

3 tbsp olive oil

1.5 cups mushrooms, sliced

1/2 cup cherry tomatoes, halved

1/2 lemon

1/4 cup basil, chopped

1/2 cup water 

1/4 cup kalamata olives, halved (optional)

 

Instructions

In a large skillet, heat oil on medium. 

Trim and tenderize chicken breasts, then lay flat in skillet to brown, about 5-7 minutes. Season with pink salt + ground pepper then flip.

Add mushrooms, tomatoes, kalamata olives, 1/2 squeezed lemon, and 2 lemon slices on chicken to cook in skillet another 5 minutes.

Once seared on either side, pour in water to finish cooking centre of chicken.
