Ingredients

2 eggs

1 tbsp. psyllium husk

1 tbsp. olive oil

1/2 tsp. Zaatar spice

Salt, to taste

1 cube of cheese

Instructions

  1. In a bowl, mix the psyllium husk, salt, and Zaatar well
  2. Crack in the eggs. Mix well with a hand blender
  3. In a pan heat the cooking fat. Pour in the egg mixture
  4. Once the edges have started to brown (2 minutes), flip over the crust and cook for 30 seconds
  5. Add the grated cheese. Let it sit in the pan for a minute or until the cheese melts. Season with more Zaatar
  6. Serve hot!
