Ingredients

2 tomatoes, diced

2 cucumbers, diced

1/2 cup pitted olives, chopped

1 large bell pepper, chopped

1 avocado, diced/feta cheese

For the dressing

3 tbsp extra-virgin olive oil

1/2 lemon, squeezed

1 tbsp red wine vinegar

pink salt and pepper, to taste

1 tsp oregano

 

Instructions

  1. Once all veggies are chopped up, combine in large mixing bowl.
  2. Whisk together all dressing ingredients, then pour over the top of the salad. Toss together thoroughly until well combined. Enjoy!
  3. Store in airtight container in the fridge up to 3 days! Great for leftovers.
