Ingredients

8 Medjool dates, pitted

¼ cup hemp hearts or ground walnuts

¼ cup unsweetened cocoa powder

2 tablespoons unsweetened shredded coconut

1 tablespoon coconut oil, melted

¼ teaspoon vanilla extract

¼ teaspoon sea salt

2 tablespoons finely chopped unsweetened dark chocolate

Instructions

  1. In a food processor, pulse the dates until a ball forms. Add the hemp hearts, cocoa powder, coconut, coconut oil, vanilla, salt, and chocolate. Process until well combined and almost smooth. 
  2. Line a baking sheet or plate with parchment paper. Use a 1-inch scoop or your hands, wetted if necessary, to shape the dough into 12 balls. Place the baking sheet in the freezer for 20 minutes or until firm.
  3. Store the leftovers in an airtight container in the refrigerator for up to 1 week.
